Pinzgauer Kasnocken / Pinzgau Cheese Noodles – a traditional regional Dish
Ingredients for 2-3 Portions:
250 g. flour, a pinch salt, 2 eggs, approx. 1/4 l water/milk mixed, 30 g butter for sautéing , 200 g (or more) Pinzgau cheese or mountain cheese, 100g chopped onion, 1/16 l bullion, roasted onion flakes and chives to garnish.

Preparation:
Combine eggs with milk; add salt and flour to liquid. Mix until dough is formed. Place dough in a strainer with course holes and with a fork press mixture into boiling water. After 3 minutes or until the noodles rise to the top of the boiling water, drain noodles and rinse with cold water. Sautee onions in butter; add noodles and small, quartered cheese bits. Add bullion to make the dish moisture. Once cheese is melted, garnish with onion flakes.
Tip: Before serving, garnish with a generous serving of fresh chives. Serve with a green salad or a glass of fresh milk.
